I am Raj . An actor by profession who has been an active part of the Worlds Largest Film Industry known as Bollywood. And here I am today sharing some chapters of my fascinating journey from Bollywood to Curry!
Indiana is a concept of my mother Sneh Lata Verma (a well known Theatre & Film Personality). She being a self made person always believed that a woman should have her own individuality, and it is important to be known for your own talent besides being known as someone’s daughter, wife and a mother.
Well, my wife Noori does not come from a film Background but is amazingly gifted
with cooking techniques and knowledge of Indian herbs and spices and when it came to deciding a platform for her, it was not difficult. So Indiana was Born!
We now live in Wales and I do not know of any Indian Restaurant that does the true proper Authentic Indian Cuisine here. Well to define true Authentic, I mean how many of we know that Chicken Tikka Masala is a British Dish. It has not come from India to Britain but gone to India from Britain. With so many Bangladeshi , Nepalese & Pakistani Restaurants the Real Indian food is lost. Even the majority of so called Indian Restaurant surprisingly do not want to move on or away from the Korma’s,Vindaloo’s, Biryaani’s and Tarka Daal’s. The truth is many feel that keeping it simple and easy is doing the trick than why disclose a territory that will double & Triple their efforts and increase the risk.
We feel differently. To us Indiana is not a restaurant but our passion. We were not born in Britain but India and have grown on the north Indian Cooking. We are used to smell of love and emotions in the cooking. An Indian meal without the Indian hospitality is incomplete and people who dine with us are not addressed as customers but Guests in our home! Trust me they feel like one. The warmth in our welcome and the freshness of flavours in our food is all real. It has been a challenge for us to launch an establishment like Indiana in the most unthinkable part of Wales because we believe and it is proven that there are people who would travel any distance for good food! Today we have guests from Far & Wide who dine with us regularly. We have a menu that justifies the richness of North Indian Cuisine where every dish smells amazing flavours. Our food is cooked fresh hence we have the flexibility to cater to each one’s own taste buds. Our guests indicate their preference of spices and we surprise them with the results.
Even the ambience comes across differently. No dark wall paper, no large Taj Mahal, No big plants, no one running with a tray in black pants, white shirt and a black bow, no rushing the guests for accommodating second seating and no small table for two in a corner! Indiana is far away from anything that is cliché and predictable. ‘It is not just good food but experience’ With many guests I discuss food , my life in Wales and sometimes Bollywood! It is a very homely and informal Atmosphere here. No Matter how busy I may be with my film projects and workshops my evenings are always at Indiana. I feel I have a strong Bond with all who come here to enjoy, encourage, inspire and support us. With a long list of so many genuine well wishers that appreciate us and what we do we cannot be more grateful. The only way to thank all is honesty and consistency in what we do. And we keep trying.
Noori has suddenly a lot more on her plate than she imagined but she has certainly made me a proud Husband and I feel so happy to see her confidence and ability to perform in the most challenging moments.
There are so many interesting stories with unforgettable real characters that I feel to write a book that sure will be an enjoyable reading material.
I can go on and on about Indiana but it is almost impossible to put an experience into words. We are not experts. We are simple people who believe in simplicity and originality, every day is a learning curve for us, and the excitement to greet the regular and new guests.
So welcome to our Home…Welcome to Indiana! |
